INGREDIENTS

2-1/3 CUPS ALL-PURPOSE FLOUR
1-2/3 CUPS SUGAR
1-1/4 MASHED BANANAS (ABOUT 3 MEDIUM)
2/3 CUP FINELY CHOPPED NUTS (OPTIONAL)
2/3 CUP SHORTENING
2/3 CUP BUTTERMILK
3 EGGS
1-1/4 TEASPOONS BAKING POWDER
1-1/4 TEASPOONS BAKING SODA
1 TEASPOON SALT

METHOD

HEAT OVEN TO 350 DEGREES,
IF USING A DARK PAN HEAT TO 330.
GREASE AND FLOUR RECTANGULAR PAN,
13x9x2 (OR 2 ROUND PANS 9x11-1/2)
BEAT ALL INGREDIENTS ON LOW SPEED,
SCRAPING BOWL CONSTANTLY, 30 SECONDS.
BEAT ON HIGH SPEED, SCRAPING BOWL OCCASIONALLY,
3 MINUTES. POUR INTO PAN(S).

BAKE UNTIL WOODEN PICK INSERTED IN CENTRE COMES OUT CLEAN,
RECTANGLE 45-50 MINUTES, ROUNDS 35-40 MINUTES; COOL.
FROST WITH FROSTING IF DESIRED.
