Ingredients:
8 Roma tomatoes, seeded and finely diced
3 garlic cloves, finely chopped
5 tbsp extra-virgin olive oil
3 tbsp balsamic vinegar
2 tbsp fresh basil, finely chopped
¾ tsp salt
½ tsp pepper
Method:
In a large bowl, add the tomatoes, garlic, olive oil, vinegar, basil, salt
and pepper. Stir in ingredients until well mixed and let them rest at room
temperature for about 30 minutes.
Serve with baguette (toast them if you like). If toasting the bread, the recipe recommends rubbing the toasted bread with garlic cloves.
