Carrot Cake By: Shenu Kassam


2 cups white flour
3 or 4 carrots (3 cups of grated carrots)
1 cup oil
cup of sugar
cup walnuts
4 eggs
2 tsp. of baking powder
2 tsp. of baking soda
2 tsp. of ground cinnamon


1.Grate carrots (3 cups) and add chopped walnuts and keep it aside
2.In a separate bowl add flour, baking soda, baking powder and cinnamon
3.In a separate bowl add eggs, oil and sugar and mix it with hand mixer for 2 minutes
4.Add half flour to the oil mixture and mix it with wooden spoon
5.Add the rest of the floor to the oil mixture
6.Add the grated carrots with walnuts to the oil mixture
7.Preheat oven to 350 degrees and grease the baking pan
8.Bake it for 45 minutes and let it cool for half an hour
