Carrot Rice Kheer By: Nazlin (Dubai)


Half cup broken rice (boiled)
1 cup grated carrots (blanched for 5 mins or until the raw smell goes and it is a bit soft)
2 cups fresh milk
1 tin evaporated milk
Half tin condensed milk
Saffron Pinch Nutmeg
Cardamom powder
Yellow color (optional )


Boil the fresh milk. Add the rice and let come to boil.
Now add the carrots and keep on stirring till another boil comes.
Add the evaporated milk and let simmer on medium flame till the kheer thickens,
stirring every few minutes. Switch off the cooker and remove the pot from the fire.
Add the condensed milk, saffron, color, cardamom powder and nutmeg.
Give it a nice stir. Serve it hot or cold.
