Ingredients:
VEDIC CURRY POWDER
Handful of curry leaves
Handful of roasted grams
1 tablespoons of black peppercorns
1 Dry roast all the ingredients on a tawa on a low heat for a few minutes
2 When cool grind them together in a spice mill
3 Sprinkle on cold salads
SOUTH INDIAN CURRY POWDER
2 oz Corriander seeds
2 oz Dry red chillies
1 oz Cumin seeds
1 oz Curry leaves
1 oz Tumeric powder
half oz Mustard seeds
half oz Fenugreek seeds
half oz Black peppercorns
Method
1 Dry roast the above ingredients except for tumeric
powder on a tawa for approx 5 mins on a low heat
2 Remove from heat and add tumeric powder
3 When cool grind in a spice mill
4 Store in a airtight jar
5 Use in vegetarian dishes
HYDRABADI CURRY POWDER
2 oz Corriander seeds
2 oz Dry red chillies
1 oz Cumin seeds
1 oz Cinnamon sticks
1 oz Curry leaves
1 oz Tumeric powder
half oz Cloves
half oz Black peppercorns
half oz Mustard seeds
half oz Fenugreek seeds
1 Dry roast all the ingredients except for tumeric
powder on a tawa for approx 5 mins on a low heat
2 Remove from head and add tumeric powder
3 When cool grind in a spice mill
4 Store in a airtight jar
5 Use in meat dishes
