Ingredients:
1 Large Tin Fruit Cocktail (reserve the cherries for decoration)
1 small apple (cut into very small pieces)
1 small pear (cut into very small pieces)
10-12 grapes
2 small packets Jelly (different colours) - already set
½ litre Vanilla Ice Cream
1 Tin Evaporated Milk
½ cup Sago (Sabudana) - microwaved in water for 5 minutes and coloured*
1 cup Whipped Cream (For decoration)
Nuts (Optional)
Method:
Cut the apple and pear into very small cubes. Drain the fruit cocktail and mix the fruits.
Cut jelly into very small pieces and mix very lightly with a metal spoon. Add the coloured sago and nuts.
Now put in the evaporated milk and stir lightly. Finally put in the ice cream and mix lightly.
Set it in a bowl and top with whipped cream. Garnish with grapes and cherries.
Serve straight from the fridge as it tastes best and very refreshing when completely chilled.
* To colour sago, microwave it for about 5 minutes.
Strain it and keep the strainer under cold running water. Make 3 parts and colour each part in a different colour.
Keep it for about 10 minutes and strain again under cold water so that the extra colours wash out.
Try and use the largest size of sago available.
