A spicy Indo-Chinese preparation of chicken. |
Ingredients 1 lb. chicken, cut into bite size pieces 2 tsp hot soy sauce 1 1/2 tsp vinegar 20 green chillies, slit 10 dry red chillies, cut into long pieces 1/2 tsp sugar 2 1/2 tsp ginger paste 2 1/2 tsp garlic paste 2 medium onions, minced 1/2 tsp red chilli powder 2 tsp chopped coriander leaves 2 tsp cooking oil Salt to taste Method Marinate the chicken in the salt, soy sauce and vinegar for about 2 hrs. Heat the oil and add the ginger/garlic paste. When the paste browns, add the red chillies, green chillies and onions. Fry till the onions are light brown in color. Now add the chicken pieces and any remaining marinade and stir fry on high heat till the chicken is well cooked. Now add the red chilli powder and sugar and mix well. Continue cooking on a low flame for 2-3 minutes. Add the chopped coriander leaves and mix well. Remove and serve hot with plain steamed rice. |
