Spinach Pie By: Almas Hajiani


2 pkgs. Puff Pastry………..
2 pkts spinach (washed and chopped)………
1 level tsp. grated nutmeg…….
1/2 tsp. salt……
1/2 tsp. black pepper…
½ tsp garlic …
3 eggs…..
2tbsp. margarine or butter…
1 ½ cup strong cheddar cheese…
¼ cup milk.


Melt butter or margarine in pan. Add spinach and let liquid reduce.
Add nutmeg, pepper , garlic and salt. Add eggs and mix well.
Last add grated cheese.
If too moist add some flour (2-3 tbsp.) to thicken but do not create a very dry mixture or a very wet mixture. .
Roll out puff pastry to line bottom and sides of pan. Put mixture in.
Then add another layer of puff pastry for the top of dish. Crimp edges and put an egg wash.
Make little slits in pie top for steam to escape. Bake at 350 until crust is golden brown.
For this amount of spinach I used a 9 by 9 glass dish.
Let it cool before slicing.
Will remain in fridge for a couple of days.
Can be eaten cold or warmed up in microwave
