Mkate Mimina (traditional rice cake) By: Late Parviz Jivraj

Ingredients:

3 Mugs of rice
1 Mug of sugar
1 Package of Coconut Cream
2 teaspoons of yeast
2 Cups warm water
3 cloves of Cardamom (Elchi) if desired

Method:

In a large bowl, combine 2 cups warm water, 1 teaspoon of sugar, and 2 teaspoons of yeast.
Mix well and let sit covered until it rises (approx. 60-70 mins).
Once yeast has risen, mix rice and blend rice, coconut, cardamom
and yeast until it has reached a smooth texture.
Let sit covered until it rises (approx. 60-90 mins).
Once this batter has risen, pour in 1 mug of sugar and mix well.
separate batter into 2 equal parts.

Baking Instructions:

Preheat oven on broil.
Place a frying pan on the stove and put 2 tablespoons of oil into pan.
Set stove on medium heat.
Pour batter into pan when oil is hot enough and cover for approx. 15 mins or until
sides of batter/cake are brown.
Remove cake from stove and place pan into oven and broil until top of cake is
golden brown (approx. 7-12 mins).
Repeat for second half of batter.
