Nasi Goreng (Indonesian fried rice) By: SJ

Ingredients:

4 cups cooked rice
1lb chicken
1/2 cup smooth peanut butter
2 Tbsp Hoisin sauce
1 cup lemon juice
3 tbsp Kecap Manis (Indonesian soy sauce- can use regular soy as well)
1 finely chopped garlic clove
1 tbsp of freshhly grated ginger
1 tbsp of brown sugar
2 tbsp. vegetable oil
3 eggs
1 onion
1tbsp of curry powder

Method:

Cook the rice and set aside. (For best results,cook rice the night before,refrigerate overnight) Cut chicken into strips and marinate with peanut butter,Holsin sauce,Kecap,brown sugar,ginger,garlic and lemon juice.Also place in fridge
over night. Beat the eggs and make into an omelet,slice into strips and set aside. Heat the oil in a wok,Dutch oven or large frying pen. Add the chopped onion, fry until soft. Remove chicken from marinate and add to onions ensuring some of the marinade is cooked with it (avoid making it too soggy).
Sprinke with curry powder, stir occassionally until chicken is done. Add the rice, mix until ingredients are evenly distributed and heated through. Top with the egg omelet strips. (Try mixing fried bananas with it as well.) Serve hot and enjoy.
