INGREDIENTS
1 cup refined flour
a pinch salt
1 round spoon
dry yeast
warm water
olive oil as needed
1 cup drained chunky tomato salsa
diced red or green bell pepper as needed
pitted and halved olives, green or black to your choice, as needed
Hot red pepper, cut into small pieces, to taste & optional
thinly sliced onion, as needed
boneless, skinless chicken breast, cut and diced, or sliced into julienne strips, as
preferred and as needed
6-8 oz shredded parmesan cheese.
Method:
In a bowl, mix flour and salt thoroughly.
Mix yeast with a little warm water; keep aside for fermentation.
Add fermented yeast to flour. Add enough warm water to make a stiff
dough. Knead thoroughly until the dough becomes
elastic. Put the dough, covered with a soaked cloth,
in a warm place; let it aside till the dough has
become double in size.
Bring out the dough and make
4 x 8-inch diameter round tortillas, ¼-inch thick.
Leave aside to rise, 3-5 minutes.
Put the dough onto a baking sheet, big enough to cover all 4 tortillas.
Spread with tomato salsa, bell pepper, olives, hot
pepper, onion and chicken. Sprinkle thoroughly with
cheese. Brush with olive oil. Bake in a pre heated
oven (350F) for 12-15 minutes, or until done.
Serve hot.
Note: If you have ready made pizza crust, thaw
crust before using.
