Ingredients:
10 dried large red chillies soaked for 20 mins
half inch fresh chopped ginger
8 cloves fresh garlic
2 tspns lime juice
1 tspn roasted corriander seeds
1 tspn roasted cumin seeds
1 tblspn water
half tspn coarse salt
6 tblspns mild olive oil for sauté
small saucepan, mortar and pestle, glass container
Method:
1 put all the above ingredients into a mortar except oil & pound coarsley with a pestle
2 heat the olive oil in a small saucepan & saute the chutney for approx 3 mins on low heat
3 put into a glass container and store in a cool place
4 use as condiment
