INGREDIENTS
8 Tomatoes peeled, deseeded and chopped
2 inches Ginger peeled and chopped
6 Garlic cloves peeled and chopped
6 Red chilles chopped
Handful of Corriander stalks chopped
100 grams Sugar
1 Lemon or lime juiced
Salt to taste
Pepper to taste
METHOD
1 Place 4 tomatoes, ginger, garlic, chillies and corriander stalks in a blender and blend into a puree,
2 In a saucepan add the puree with the sugar and cook until it starts to look
syrupy and the liquid has reduced. This should take approx 20 to 25 minutes
3 Now add the remaining chopped tomatoes to the pan
4 Season well with salt and pepper
5 Add lemon or lime juice
6 Remove from heat and allow the flavour to develop and the mixture to condense into a loose jamlike consistency
7 Store in a airtight jar
8 Serve with spicy grilled meat, fish, chicken, liver, kidneys
